A long, slow 180 day fermentation after a cold maceration, and bottling before fully fermented to create a petillant naturel sparkling cider.

Tasting notes: Guava, overripe mango, bergamot, candied orange peel, black tea, tannic.

Pairings: BBQ chips, aged ribeye, lamb ribs.
